Ingredients
- 200 g beef marrow
- 3 eggs
- 200 g breadcrumbs
- 2 tsp freshly chopped parsley
- 1 pinch grated untreated lemon zest
- Salt
- Nutmeg (freshly grated)

Melt the marrow over low heat, strain through a sieve and whisk until frothy. Add the egg, breadcrumbs and parsley, then season with lemon zest, salt and nutmeg. Let rest for 30 minutes. Form small balls from the mixture and cook in lightly boiling salted water for about 15 minutes. Drain.
