Marinated Turkey Roast

Ingredients

  • 1 small red chili pepper
  • 2 tbsp Soy sauce
  • 1 tbsp honey
  • 800 g turkey breast fillet
  • 400 ml Chicken broth
  • Salt
  • Pepper
  • kitchen twine
  • 2 tbsp oil
  • 400 g cocktail tomatoes
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tsp cornstarch
  • 750 g asparagus

Instructions

    Clean the chili pepper, remove seeds, rinse and finely chop. Mix chili with soy sauce and honey. Rub turkey breast thoroughly with mixture. Place in a freezer bag, seal and marinate overnight in refrigerator.

    Remove meat from bag. Scrape off excess marinade into broth. Pat meat dry and season with salt and pepper. Tie with kitchen twine if desired. Heat 2 tbsp oil in a non-stick pot. Brown meat all sides. Add broth, cover and simmer for about 45-50 minutes.

    Rinse tomatoes and pat dry. Heat olive oil in a pan. Quickly sear tomatoes over high heat, adding vinegar. Season with salt and pepper and set aside warm.

    Peel the lower third of asparagus spears, cut off ends generously. Cook asparagus in salted water for 6-8 minutes. Drain.

    Remove meat from broth. Whisk cornstarch with cold water and stir into broth. Bring to a boil, season with salt and pepper. Slice meat and serve with sauce, tomatoes and asparagus.
