Marinated Sea Bass from the Grill

Ingredients
- 2 tbsp olive oil
- 2 sprigs thyme
- 2 sage leaves
- 1 bay leaf
- 1 sprig rosemary
- 2 shallots (sliced)
- 1 tsp peppercorns
- 1 tsp mustard seeds
- 800 g sea bass fillet (4 fillets)
- Salt
- ground pepper

Using a mortar, make a pesto-like mixture from olive oil, sage leaves, thyme and rosemary, shallots, garlic, mustard seeds, peppercorns and bay leaf. Pour this marinade over the fish and let it marinate for several hours, turning the fish once during that time.

Remove the fillets from the marinade. Scrape off some of the marinade with a knife and then pan‑fry or grill the steaks. Season with salt and pepper afterwards.
