Marinated Sardines

Ingredients
- 500 g fresh sardine fillets (ready to cook)
- 1 onion (coarsely chopped)
- 1 carrot (peeled and finely diced)
- 1 sage leaf
- 1 tsp peppercorns
- 250 ml dry white wine
- 1 lemon (sliced)
- Salt
- 100 g red paprika strips (pickled, e.g., from a jar)
- 1 bunch parsley (finely chopped)
- 1 Garlic clove
- 125 ml olive oil
- 100 g black olives

Simmer carrot, onion, sage, peppercorns, 250 ml water, lemon slices and wine for about 10 minutes, season with salt, remove from heat, then let the fish steep in the spice broth for about 2 minutes, remove and cool, place in a shallow bowl.

Mix oil with parsley and pressed garlic, pour over the sardines, let sit for about 4 hours, turning occasionally. Arrange on a flat dish for serving, decorate with paprika strips and scatter olives over the sardines.
