Ingredients
- 8 fresh herring, kitchen-ready prepared (without head and thin belly skins)
- Salt
- black pepper (freshly ground)
- 2 tbsp flour
- 3 tbsp vegetable oil
- 4 shallots
- 5 tbsp tomato paste
- 2 tbsp Red wine vinegar
- 4 tbsp sugar
- 60 g raisins
- 3 Cloves
- 2 Bay leaves
- 150 ml olive oil

Rinse the herring, pat dry and season with salt and pepper. Dredge in flour and fry in a non-stick pan over hot oil for 5-6 minutes on each side until golden brown. Then place them side by side in a shallow dish.

Peel the shallots and cut into rings. Combine tomato paste, vinegar, sugar, raisins, cloves, and bay leaf; simmer. Season with salt, pour the sauce over the herring and cover with olive oil. Cool and refrigerate covered overnight.
