Marinated Duck Roast

Ingredients
- 3 kg duck
- 2 red onions (peeled, halved)
- 4 garlic cloves (peeled, roughly chopped)
- 5 cm galangal (peeled)
- 2 lemongrass stalks
- 2 tsp nutmeg flower
- 2 tsp mixed peppercorns
- 1 tsp turmeric
- 1 tsp coriander seeds
- 1 tsp cardamom seeds (without pod)
- 1 tsp salt
- 2 fresh red chilies
- 2 tsp fish sauce
- 3 tbsp dark soy sauce
Instructions

Combine all marinating ingredients in a blender and puree finely.

Roast the mixture without oil in a pan for a short time, then let it cool slightly.

Brush the duck thickly on both sides with the cooled mixture.

Wrap the duck in oiled aluminum foil and refrigerate for 2 hours.

Place the wrapped duck on the oven rack, poke a few holes at the bottom to allow fat to drain during cooking.

Bake in a preheated oven at 220°C with a pan of water underneath for 30 minutes, then reduce temperature to 170°C and continue roasting for 3-4 hours, ensuring there is always water in the pan.

Remove the duck from the oven, let it cool slightly, and wipe off any remaining marinate if desired.

Carve the duck and finish under the broiler at 270°C until crispy.
