Marinated Chicken Indian Style

Ingredients
- 4 chicken breast fillets (≈140 g each)
- pepper (ground fresh)
- 4 tbsp mango chutney (jar)
- 500 g yellow bell pepper
- 1 chili pepper
- 2 red onions
- 2 Garlic cloves
- 1 tsp freshly grated ginger
- Salt
- 2 tbsp Ghee
- 150 ml coconut milk
- 2 tbsp fresh chopped coriander (cilantro)

Wash and pat dry the chicken breasts. Season with pepper and mix well with the chutney. Cover and marinate in the refrigerator for at least 1 hour.

While the chicken marinates, wash the bell peppers, halve them, remove seeds, and cut into strips. Wash and finely chop the chili pepper. Peel the onions and garlic; slice the onions and mince the garlic. Scrape a spoonful of chutney from the chicken breasts (reserve the rest), season with salt and pepper, and briefly sear both sides in hot ghee. Remove from pan, then sauté ginger, garlic, onions, chili, and peppers for 1–2 minutes. Deglaze with coconut milk, place the chicken breasts on top of the vegetables, spread the reserved chutney over the breasts, cover, and simmer gently for about 15 minutes. Stir in coriander, season with salt and pepper, and serve the chicken with vegetables plated on a dish.
