Marinated Bourbon Steak Tips

Ingredients
- 1 onion
- 2 Garlic cloves
- 2 tbsp plant oil
- 150 g ketchup
- 100 ml bourbon whiskey
- 40 ml apple cider vinegar
- 75 g brown sugar
- 60 ml soy sauce
- 2 tbsp Worcestershire sauce
- chili powder
- Salt
- ground pepper
- 800 g steak tip (beef)

Peel the onion and garlic. Finely chop both and sauté briefly in hot oil until translucent. Add ketchup, a splash of water, half the bourbon and the vinegar. Stir in sugar, soy and Worcestershire sauces, chili powder, salt and pepper, then bring to a boil. Simmer gently, partially covered, for about 15 minutes on low heat with occasional stirring until desired consistency is reached. Add remaining bourbon, remove from heat and taste.

Rinse the steak tips, pat dry and brush with some sauce. Let them marinate covered in the refrigerator for at least 3 hours. Then sear in hot oil in a grill pan 3-4 minutes per side (depending on thickness). Serve with the remaining sauce on the side and optionally with mashed potatoes.
