Ingredients

  • 125 g butter
  • 2 Eggs
  • 125 g sugar
  • 3 tbsp milk
  • 250 g flour
  • 1.5 tsp Baking Powder
  • 75 g dark chocolate
  • butter (for the pan)
  • 4 eggs
  • Salt
  • 1 kg low-fat quark
  • 1 tsp lemon zest
  • 1 packet vanilla pudding mix
  • 1 tsp Cornstarch
  • 200 g sugar
  • 1.5 tbsp freshly brewed espresso (cold)
  • 1 tbsp cocoa powder

Instructions

    Preheat the oven to 180°C (350°F) with upper and lower heat. For the base, beat the butter until fluffy, then gradually add the eggs, sugar, and milk. Mix flour with baking powder, sift over the batter, and stir in. Roughly chop the chocolate, melt it over a hot but not boiling water bath, remove from heat, and let cool slightly.

    Stir the melted chocolate into the batter and spread it in a buttered springform pan. Bake in the preheated oven for about 10 minutes. Separate the eggs; beat the egg whites with a pinch of salt until stiff peaks form, and whisk the yolks with quark, lemon zest, pudding mix, cornstarch, and sugar. Take 4 tbsp of the quark mixture and blend it smoothly with espresso and cocoa.

    Fold the beaten egg whites into the remaining quark cream. Remove the cake base from the oven, let it cool slightly, and spread the quark mixture over it. Place the chocolate mixture in a freezer bag, cut a small corner, and spray it in circular patterns on top of the quark layer. Use a fork to create a marble pattern, then bake the whole cake for another 40-45 minutes until done. Test with a toothpick. Take the finished cake out, let it cool, remove the ring, slice, and serve.
