Ingredients

  • 4 sheets gelatin
  • 1 Mango
  • 1 tsp ground turmeric
  • 60 g brown sugar
  • 2 tbsp Lime juice
  • 2 Eggs
  • 100 g yogurt
  • 100 ml heavy cream
  • ground turmeric
  • meringue

Instructions

    Soak the gelatin in cold water. Peel the mango, remove the flesh from the pit and cut into pieces. Blend with turmeric, 1 tbsp sugar and lime juice until smooth. Reserve 2 tbsp for garnish and set aside chilled.

    Beat the eggs with the remaining sugar over a hot water bath until thick and creamy. Add the squeezed gelatin and stir to dissolve. Whisk in cold, then fold in the mango puree with yogurt. Beat the cream stiff and fold into the mousse.

    Fill the mousse into four silicone pudding molds sprayed with non‑stick spray (or lined with plastic wrap). Cover and refrigerate for at least 3 hours.
