Mandarin Cream Cheese Cake

Ingredients
- 200 g fruit muesli
- 175 g sugar
- 75 g soft butter
- butter (for the pan)
- 1 can mandarins (175 g drained weight)
- 400 g double cream cream cheese
- 300 g Low-fat quark
- 300 g yogurt
- 3 tbsp Lemon juice
- 10 sheets white gelatin
- 8 fresh mandarins
- 4 tbsp mandarin jam (or orange jam as substitute)

Knead the muesli, 75 g sugar and butter together. Press the mixture into the bottom of a greased springform pan. Refrigerate. Soak the gelatin in cold water.

Drain the mandarins in a sieve, then cut each half in half. Whisk cream cheese with quark, yogurt and lemon juice until creamy. Place the soaked gelatin in a small pot and melt over low heat, then stir into the cheese mixture. Fold in the drained mandarins. Spread this over the chilled muesli base and smooth the surface. Chill for 3‑4 hours.

Peel the fresh mandarins thoroughly, slice crosswise and arrange on the set cream. Warm the jam, strain through a sieve, then brush it onto the mandarin slices with a pastry brush. Let cool. Sprinkle with some muesli and serve.
