Ingredients

  • 4 eggs (size M)
  • 150 g sugar
  • 0.5 tsp ground vanilla
  • 125 g melted butter
  • 1 tbsp water
  • 110 g flour
  • 500 ml milk
  • 1 pinch salt
  • 1 lemon
  • 100 g blueberries

Instructions

    Preheat the oven to 160°C fan and top heat.

    Grease a cake tin or line with parchment paper. Melt the butter in a pot and let it cool slightly.

    Separate the eggs. Beat the egg whites with salt until very stiff. Whisk the yolks and sugar until fluffy. Add the butter, water and vanilla and stir for 2-3 minutes until creamy. For the lemon magic cake add grated zest and juice of one organic lemon and mix in.

    Add the flour and whisk everything into a smooth batter. Slowly pour in the milk while constantly stirring.

    Fold the beaten egg whites into the batter gently in three steps – do not overmix to keep it light.

    Spread the batter evenly in the tin.

    Bake for about 60 minutes until the top is golden brown. Garnish with berries before serving.
