Ingredients
- 350 g macaroni
- 400 g mixed vegetables (e.g., carrots, zucchini, green beans, all finely chopped)
- 250 g Cherry Tomatoes
- 1 onion
- 2 Garlic cloves
- 6 tbsp Olive oil
- 2 tbsp lemon juice
- Salt
- Pepper (freshly ground)
- a pinch nutmeg
- Basil
Instructions

Break macaroni into pieces and cook in plenty of boiling salted water until al dente, then drain, rinse with cold water, and let stand. Wash and halve the tomatoes.

Cook the vegetables in boiling salted water for about 6 minutes until al dente, then drain, rinse with cold water, and set aside.

Peel and finely dice the onion and garlic; sauté both in hot oil in a pan until translucent, then add to the vegetables along with the tomatoes, pasta, and basil and mix well.

Stir in the remaining olive oil and lemon juice, season with salt, pepper, and nutmeg, and serve.
