Macaroni Salad

Ingredients

  • 350 g short macaroni
  • 1 Zucchini
  • 300 g cherry tomatoes
  • 1 Red Onion
  • 100 g black olives
  • 250 g feta cheese
  • 1 tbsp finely chopped parsley
  • juice of 1 lemon
  • 4 tbsp olive oil
  • Salt
  • ground pepper

Instructions

    Cook pasta in plenty of boiling salted water until al dente, drain, rinse with cold water and let drain.

    Wash, peel, and slice zucchini into thin ribbons or dice.

    Wash and halve cherry tomatoes.

    Peel onion and cut into rings.

  5. 5.

    Break feta into small cubes.

  6. 6.

    Whisk lemon juice with olive oil, salt, pepper and parsley. Toss the salad ingredients (except feta) together, divide onto plates and sprinkle with feta. Serve macaroni salad.
