Ingredients

  • 4 small Wolfsbarsch fillets
  • 2 large tomatoes
  • Salt
  • Pepper (freshly ground)
  • Lemon juice
  • 100 ml fish stock
  • 150 g crème fraîche
  • 2 tsp chopped tarragon leaves
  • Tarragon for garnish

Instructions

    Wash the fish fillets, pat dry, drizzle with lemon juice, season with salt and sprinkle with chopped tarragon.

    Wash the tomatoes and slice them.

    Whisk the crème fraîche with the fish stock until smooth, season with salt and pepper, and pour into a baking dish. Arrange tomato slices in the dish and place the fish fillets on top. Cover the dish with foil and bake in a preheated oven at 180°C for about 30 minutes. Serve garnished with tarragon.
