Lokum

Ingredients
- 2 packets powdered gelatin (9 g each)
- 500 g sugar
- 6 tbsp cornstarch
- 1 tbsp rose water
- 2 tbsp cherry juice
- 1 tbsp orange blossom water
- 50 ml orange juice
- 1 tbsp mint syrup (or mint liqueur)
- 50 ml peppermint tea
- 1 tbsp Lemon Juice
- 1 tbsp Blue Curacao (or blue food coloring)
- 100 g powdered sugar
- silver sugar pearls

Whisk the gelatin into about 8 tbsp cold water and let it bloom for ~10 minutes. Bring 250 ml water with the sugar to a boil in a pot. Dissolve the cornstarch in a little cold water and add it to the sugar water, simmer briefly. Divide the sugar water into five equal portions in small bowls. For the pink fruit jelly cubes, add rose water and cherry juice to one portion. For the yellow jelly cubes, stir orange blossom water with orange juice into another pot of sugar water. Repeat with remaining ingredients. Spoon gelatin into each bowl and stir into the liquids.

Line 5 shallow molds (10x15 cm) with parchment paper and pour in the different fruit jellies; let cool. Remove from molds, cut into 2 cm cubes, roll in powdered sugar if desired, decorate with sugar pearls, and place in praline molds.
