Ingredients
- 500 g lobster (deveined and peeled except for the tail end)
- 1 handful basil
- 75 g flour
- 75 g potato starch
- 1 tsp Baking powder
- 1 tbsp Olive Oil
- a pinch salt
- vegetable oil (for frying)

Rinse the lobsters and pat them dry. Rinse the basil, pluck the leaves, and pat them dry. For the batter combine the flour with the starch, baking powder, olive oil, and salt, then whisk in cold water (about 125 ml) until a thick batter forms.

Dip portions of the lobsters into the tempura batter and fry in hot oil for 1-2 minutes until golden brown. Also dip the basil leaves with a large pair of tweezers into the batter and fry them to golden brown as well. Drain everything on kitchen paper and serve.
