Lime Ice with Tropical Fruits

Ingredients
- 300 g lime fruit yogurt
- 200 g whipping cream
- 3 tbsp Lime juice
- 1 tbsp lemon sugar
- 2 egg whites
- 80 g sugar
- 1 pinch salt
- 4 kumquats
- 8 lychees
- 1 Pomegranate
- 50 ml orange juice
- 2 tbsp honey

Combine all ingredients for the ice in a bowl, mix well, season to taste and freeze in an ice cream maker or freezer. In the freezer stir vigorously every 2 hours during the first 2 hours, then let it freeze for another 2 hours.

For the meringue beat the egg whites on low speed until no large bubbles form, then increase to high speed until stiff peaks form. Season with a pinch of salt. Gradually add half the sugar as the meringue starts to set, then add the remaining sugar. Transfer everything into a piping bag fitted with a wide tip and pipe small rosettes onto parchment paper on a baking sheet at intervals. Preheat oven to 75 °C fan. Let the meringues dry on the middle rack for about 2.5 hours until they remain as white as possible.

Remove finished meringues from the oven, cool them, then gently break them apart.

Slice the kumquats into rounds. Peel and pit the lychees. Remove seeds from the pomegranate and mix the fruits with orange juice and honey.

Let the ice soften slightly, then spread it onto plates with a spatula, garnish immediately with broken meringue pieces and fruit mixture.
