Light Vinaigrette

The light vinaigrette with orange juice & mustard is a basic recipe from Spoonsparrow that tastes delicious on leafy salad.

Ingredients

  • 2 oranges
  • 1 tbsp coarse Dijon mustard
  • 2 tbsp white balsamic vinegar
  • Salt
  • Pepper
  • 75 ml cold-pressed olive oil

Instructions

    Squeeze the oranges and measure 175 ml of juice. In a small saucepan, reduce over medium heat to about one-third.

    Whisk in mustard, balsamic vinegar, salt, and pepper until smooth.

    Gradually whisk in the olive oil in a thin stream until emulsified.

    Alternatively, pour the reduced juice with mustard, vinegar, salt, pepper, and olive oil into a screw‑cap glass and shake vigorously.
