Light Strawberry Cake

Ingredients

  • butter (for the springform)
  • Flour (for the springform)
  • 3 eggs
  • 1 pinch salt
  • 75 g sugar
  • 50 g flour
  • 2 tbsp Cornstarch
  • 0.5 tsp Baking powder
  • 500 g strawberries
  • 2 tbsp lemon juice
  • 2 tbsp cassis (or black currant juice)
  • 8 sheets gelatin
  • 500 g yogurt
  • 250 g quark
  • 100 g powdered sugar
  • 2 tbsp orange liqueur (or orange juice)
  • 500 ml whipping cream
  • 1 packet red fruit glaze

Instructions

    Preheat the oven to 180°C with fan and top heat. Butter the springform base and dust it with flour.

    Separate the eggs. Beat the egg whites with salt until stiff peaks form, then gradually add sugar while continuing to beat until glossy. Fold in the yolks, sift in the flour, cornstarch, and baking powder, and gently fold into a light batter. Pour into the springform, smooth the surface, and bake for about 15 minutes or until a skewer comes out clean. Remove from oven and let cool. Then release from the form and cut off the top layer (save for another use).

    Wash, trim, and slice the strawberries. Reserve about 350 g for topping. Puree the rest with lemon juice and cassis, then strain through a fine sieve. Soak gelatin sheets in cold water. Whisk yogurt, quark, and powdered sugar until smooth. Squeeze out excess water from gelatin and melt it gently in a small pot with the liqueur. Stir in 3-4 tbsp of the yogurt mixture and combine with the remaining cream. Take about half of this mixture and fold into strawberry puree. Whip 400 ml cream to stiff peaks, then fold each half into both yogurt creams.

    Place a ring around the cake base and spread the red yogurt cream over it. Spoon the white cream on top and spread evenly. Chill for at least 3 hours.

    Remove the ring from the cake edge. Whip remaining cream to stiff peaks and brush it along the rim of the cake. Top the light strawberry cake with the reserved strawberries. Prepare the fruit glaze according to package instructions, drizzle over the cake, allow it to set, then cut into slices for serving.
