Lemon Yogurt with Strawberry Sauce
A fresh dessert featuring lemon yogurt topped with a strawberry sauce, brought to you by Spoonsparrow!
Ingredients
- 4 sheets gelatin
- 350 g yogurt
- 1 untreated lemon (juice and zest)
- 3 tbsp powdered sugar
- 20 ml lemon liqueur
- 1 Egg white
- 150 ml whipping cream
- 250 g strawberries
- strawberries
- lemon slice

Soak the gelatin in cold water. Whisk the yogurt with lemon juice, zest, and 2-3 tbsp powdered sugar until smooth. Warm the squeezed gelatin with the liqueur and let it melt. Stir in 2-3 tbsp yogurt cream and mix into the remaining mixture. Beat the egg white with the rest of the powdered sugar until stiff peaks form, then fold into the mousse. Whip the cream to stiff peaks and gently fold in.

Divide the mousse among serving cups and cover; chill for at least 2 hours.

Wash, pit, finely puree the strawberries and strain through a sieve. Serve the mousse topped with strawberry purée and garnish with fresh strawberries and lemon slices as desired.
