Ingredients

  • 500 g coarse sea salt
  • 1 bunch fresh thyme (preferably lemon thyme)
  • 2 untreated lemons

Instructions

    Wash the lemons thoroughly and dry them, then finely grate the rind all around. Strip the thyme leaves from the stems and mix with the lemon zest.

    Divide the salt and herb-lemon mixture into 3-4 portions each.

  3. 3.

    Take one herb portion with 1–2 tbsp of salt into a mortar and crush it, continuously adding more salt as you move the pestle until one portion is exhausted.

    Transfer to jars and let steep for at least one day before use.
