Lemon Tart

Ingredients
- 225 g flour
- 0.5 tsp cinnamon
- 1 untreated lemon (peeled zest)
- 100 g butter
- 30 g powdered sugar
- 2 untreated lemons (juice and zest)
- 100 g powdered sugar
- 4 egg yolks
- 300 ml crème fraîche
- 150 g whole wheat cookies
- 1 lemon
- powdered sugar (for dusting)

For the dough, quickly mix the butter with the flour, cinnamon, lemon zest, sugar and a little cold water until a smooth dough forms. Shape into a ball, wrap in foil and refrigerate for 1 hour.

Crush the cookies, put them in a bowl, pour the warm mixture over them and let stand for 30 minutes. Roll out the dough on a floured surface to a rectangle of 10 x 28 cm, place it in a greased long tart pan. Cut strips from the leftovers.

Fill with lemon filling, smooth it out, arrange dough strips in a lattice pattern over the cake. Bake at 180°C for 35 minutes. Let cool well, halve the remaining lemon, slice and distribute on top of the cake pieces, then dust with powdered sugar.
