Ingredients

  • 3 untreated lemons
  • 2 untreated limes
  • 75 g butter
  • 200 g sugar
  • 3 eggs

Instructions

    Wash the lemons and limes hot, pat dry and grate the zest. Juice all fruits and strain through a sieve.

    Whisk the butter over a double boiler with sugar, zest, and juice, stirring until melted.

    Beat in the eggs gradually, stir continuously over the double boiler until the mixture becomes creamy.

    Fill sterilized jars with the hot mixture, seal tightly, cool, then store in the refrigerator.
