Lemon Slices

Ingredients
- 250 g spelt flour Type 1050
- 0.5 packet Baking powder
- 120 g agave syrup
- 1 pinch salt
- 125 g butter (room temperature)
- 2 Eggs
- 60 ml buttermilk
- 1 Organic lemon
- 1 packet vanilla pudding powder
- 450 ml Milk (3.5% fat)
- fresh mint (for garnish)

For the base, combine flour and baking powder in a bowl and mix. Add 80 g agave syrup, salt, butter pieces, eggs, and buttermilk; beat with a hand mixer until smooth.

Transfer dough to a baking pan and spread evenly. Bake in a preheated oven at 180 °C (160 °C fan) for about 25–30 minutes or until a skewer comes out clean. Remove and let cool.

For the topping, rinse lemon hot, pat dry, and zest finely. Halve the lemon and squeeze its juice. Whisk vanilla pudding powder into the lemon juice until smooth. Bring milk with 40 g agave syrup to a boil. Stir in the prepared pudding mixture and cook while stirring for 1–2 minutes. Remove from heat. Spread lemon cream over the cooled base.

Wash mint, dry, and chop leaves. Garnish the cake with mint, cut into pieces, and enjoy.
