Lemon Mousse

- 4 sheets white gelatin
- 4 eggs
- 100 g sugar
- 1 lemon (juice and zest)
- 100 g sugar
- 4 pitahaya fruits
- peppermint leaves
- powdered sugar
- lemon zest

Soak the gelatin in a small amount of cold water. Separate the eggs. Whisk egg yolks with sugar until fluffy, then add lemon juice and zest. Dissolve the gelatin in a small pot over low heat until fully melted, then stir into the yolk mixture and combine well. Beat egg whites to stiff peaks and fold them in gently. Chill the mousse for 2 hours.

In a saucepan, slowly caramelize the remaining sugar over medium heat. Pass peeled and sliced pitahaya through the caramel, then arrange on small bowls. Scoop portions of the mousse into the bowls and serve alongside. Drizzle the leftover caramel from the pot directly onto the dessert with a fork in thin strands. Garnish with mint leaves, powdered sugar, and lemon zest.
