Lemon Chicken

Ingredients
- 1 Chicken (ca. 1,4 kg, ready to cook)
- 1 handful thyme
- 4 untreated lemons
- 2 EL olive oil
- salt
- Pepper (from grinder)
- 1 EL honey
- 1 TL paprika powder (sweet)
- Olive oil (for the dish)
- 4 Onions
- 2 fresh garlic cloves
Instructions

Preheat the oven to 180°C with upper and lower heat.

Wash and pat dry the chicken. Wash thyme and shake dry. Remove leaves from about half of the stems. Rinse lemons hot. Cut one lemon in half and squeeze its juice. Slice another lemon into rounds, mix with a bit of olive oil, whole thyme sprigs, salt and pepper, and stuff the chicken with this mixture. Mix lemon juice with honey, paprika powder, remaining oil, salt, pepper and thyme leaves, then brush the chicken with it.

Halve or quarter the remaining lemons and place them in an oiled baking dish. Peel onions and cut into large pieces. Split garlic cloves in half, add to the chicken and onions around the lemons. Bake in preheated oven for about 1 hour, basting the chicken with its own juices and adding a little water as needed.
