Leek Lasagna

Ingredients

  • 4 stalks leek
  • 60 g Butter
  • Salt
  • Pepper (freshly ground)
  • 3 tbsp Flour
  • 500 ml meat broth
  • 200 ml whipping cream
  • 150 g grated cheese (e.g., Emmental)
  • nutmeg
  • 12 lasagna sheets
  • 150 g smoked ham (thin slices)

Instructions

    Clean the leeks, halve them lengthwise, wash thoroughly and cut into about 1 cm wide strips. In a large pan sauté in 1 tbsp butter for about 2 minutes. Season with salt and pepper and remove from heat.

    For the sauce melt the remaining butter in a small pot. Whisk in the flour and gradually add the broth with the cream while stirring. Let it simmer until thickened. Remove from heat, fold in the cheese (leaving 50 g for topping) and season with salt, pepper and nutmeg.

    Preheat the oven to 200 °C (convection).

    Layer the dish by spreading a little sauce on the bottom of a baking dish. Place about 3 sheets of pasta, top with some leek, add a bit more sauce and lay 2–3 slices of smoked ham. Continue layering until all ingredients are used. Sprinkle the remaining cheese over the final ham layer and bake the lasagna for about 40 minutes until golden brown.
