Leek and Radish Soup

Ingredients

  • 2 bunches radishes
  • 1 stalk leeks
  • 2 tbsp butter
  • 500 ml vegetable broth (from a jar)
  • 2 tbsp Sour cream
  • 40 g radish sprouts
  • salt (pepper)

Instructions

    Wash the radishes with their greens, dry and roughly chop ¾ of them; slice the rest into rounds then into strips. Roughly chop a handful of radish greens.

    Wash the leeks and cut into rings. Sauté the leeks with the radish greens and chopped radishes in butter. Add broth, season with salt and pepper, and simmer for 10 minutes before puréeing.
