Lebkuchen-Spitzbuben: Here are two popular cookie classics combined into one delightful treat.

Ingredients

  • 400 g wheat flour type 1050
  • 10 g flour for handling
  • 70 g raw cane sugar
  • 0.25 tsp organic lemon zest
  • 0.5 tsp cinnamon
  • 0.5 tsp cloves
  • 0.5 tsp Cardamom
  • 0.5 tsp nutmeg
  • 0.5 tsp allspice
  • 0.5 tsp coriander
  • 0.5 tsp ginger
  • 0.5 tsp potash
  • 0.5 tsp deerhorn salt
  • 190 g cold butter
  • 2 Eggs
  • 180 g red currant jam
  • 20 g powdered sugar from raw cane sugar

Instructions

    Sift flour onto a work surface. Mix sugar with lemon zest and spices, then spread over the flour. Cut cold butter into small pieces and scatter on top of the flour mixture. Press a well in the center and add eggs. Knead by hand into a smooth dough. If needed, add a little cold water. Wrap in a damp kitchen towel and chill for 1 hour.

    Roll the dough to a thickness of 4 mm on a floured surface. Use a suitable cookie cutter to cut out flower shapes (about 3–4 cm diameter). Place them on a baking sheet lined with parchment paper, punch a small circle from the center of each flower, and bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 10 minutes.

    Remove the cookies from the oven, lift them off the parchment, and let cool.

    Warm the jam slightly. Dust the holes of the flowers with powdered sugar and spread jam on the remaining parts. Place a matching counterpart on top, press lightly, and allow to dry.
