Lebkuchen mit Mandeln
Lebkuchen mit Mandeln von Spoonsparrow: Diese köstliche Weihnachtsleckerei bekommt sein wunderbares Aroma durch Honig, Mandeln und Gewürze!
Ingredients
- 500 g honey
- 125 ml oil
- 250 g sugar
- 700 g flour
- 1 packet baking powder
- 250 g ground almonds
- 1 tbsp cinnamon
- 0.25 tsp cloves powder
- 0.25 tsp allspice
- 1 pinch salt
- 3 eggs
- 100 g lemon zest (very finely chopped)
- 100 g orange zest (very finely chopped)
- 3 tbsp whipping cream
- 100 g peeled almond kernels
- 20 cherries halved

Boil oil, honey and sugar while stirring, then let cool. Mix flour, baking powder, ground almonds, spices, eggs, lemon zest and orange zest. Stir in honey (if dough is too soft, add a bit more flour). Cover and refrigerate for about 1 hour.

Preheat the oven to 180°C fan.

Press the dough onto a greased baking sheet, smooth it out and spread cream over it. Use a sharp knife to score triangles without cutting through the dough, then decorate with almonds, cherries and lemon zest pieces as desired. Bake the almond gingerbread on the middle rack in the preheated oven for about 40 minutes until light brown, remove, let cool slightly, lift from the sheet and cut into the marked triangles.
