Ingredients

  • 4 slices veal liver (about 150 g each)
  • 2 onions
  • 2 tart apples
  • 1 tbsp Lemon Juice
  • 3 tbsp butter
  • 2 tbsp flour
  • 2 tbsp clarified butter
  • 2 sage leaves
  • 2 sprigs thyme
  • Salt
  • ground pepper

Instructions

    Wash the liver, pat dry and remove all membranes. Peel the onions and slice them into thin rings. Wash the apples, core them, cut into about 1 cm thick slices and drizzle with lemon juice.

    Sauté the onion rings in 1–2 tbsp butter in a pan until translucent. Remove and set aside.

    Coat the liver slices in flour and tap off excess. Heat clarified butter in another pan and brown each side of the liver for 2–3 minutes (depending on thickness). Add herbs to aromatize. In the first pan melt additional butter, cook apple slices on both sides for 2 minutes until golden yellow, then add onions and warm through.

    Season the liver with salt only at this point, plate with apples and onions, grind pepper over it and serve with a fresh salad if desired.
