Lasagna with Ground Beef and Spinach

Ingredients
- 1 Carrot
- 2 onions
- 2 sprigs parsley
- 1 tbsp butter (15 g)
- 500 g ground beef
- 150 ml red wine
- 370 g diced tomatoes
- 100 ml meat broth
- 2 Bay leaves
- Salt
- Pepper
- 500 g fresh spinach leaves
- 1 Garlic clove
- 1 tbsp Olive Oil
- 200 g crème fraîche
- nutmeg
- 250 g mozzarella (2 balls)
- 300 g whole wheat lasagna sheets
Instructions

Peel and dice the carrot. Peel and finely chop one onion. Wash, dry shake, and finely chop parsley.

Melt butter in a pan and sauté the carrot and onion, then add ground beef and brown it. Pour in red wine and reduce. Add tomatoes, broth, parsley, and bay leaves; cover and simmer over low heat for 20–30 minutes. Remove bay leaves and season the ragù with salt and pepper.

Clean, wash, and wilt spinach in boiling salted water. Drain in a sieve, rinse, squeeze out excess liquid, press to dry, then chop. Peel and finely chop remaining onion and garlic.

Heat olive oil in a pot, sauté onion, stir in spinach with crème fraîche, season with salt, pepper, and nutmeg, and set aside. Slice mozzarella into rounds.
