Lamb with Mash

Ingredients

  • 200 g spinach leaves
  • Salt
  • 2 Garlic cloves
  • Pepper
  • nutmeg
  • 1 pinch chili powder
  • 2 lamb chops (about 350 g each)
  • 4 tbsp flour
  • 2 Eggs
  • 60 g breadcrumbs
  • 3 tbsp ground almonds (peeled)
  • 4 tbsp Vegetable oil
  • 800 g waxy potatoes
  • 200 ml milk
  • 3 tbsp butter

Instructions

    Wash, rinse and blanch the spinach in salted water for 1-2 minutes. Drain well and finely chop. Peel the garlic and press it into the spinach. Season generously with salt, pepper, nutmeg and chili.

    Preheat the oven to 120°C (250°F) on both top and bottom heat.

    Rinse the lamb chops, pat dry and cut a slit lengthwise. Stuff them with the spinach mixture and season the outside with salt and pepper. Coat the meat in flour, then dip through beaten eggs. Mix breadcrumbs with almonds and dredge the meat in this coating. Quickly brown both sides in hot oil, then place on a parchment-lined baking sheet and bake for about 20 minutes until pink inside.

    Meanwhile peel and cube the potatoes. Boil in salted water for 15-20 minutes until tender, drain and mash with a potato masher. Stir in warm milk and butter, season with salt and nutmeg to taste.

    Remove the lamb from the oven and slice it. Serve over the mashed potatoes.
