Lamb Patties with Orange Couscous

Ingredients

  • 200 ml orange juice
  • 1 pinch of cumin, turmeric and cayenne pepper per person
  • 1 star anise
  • 1 cinnamon stick
  • Salt
  • 50 g Alpro semi-fat margarine
  • 200 g Couscous
  • 1 red bell pepper
  • 1 tomato (seeded)
  • 1 bunch parsley
  • 40 ml lemon juice
  • 1 stale roll
  • 200 ml Alpro soy drink (soy milk) Original
  • 2 onions
  • 2 Garlic cloves
  • 4 tbsp olive oil
  • 4 tbsp curry powder
  • 600 g lamb mince
  • 2 eggs (medium size)
  • 50 g Raisins
  • 80 g pine nuts
  • Salt
  • mint yogurt (alternative: )
  • 3 sprigs fresh mint
  • 250 g Alpro yogurt (natural alternative)
  • salt, pepper, sugar

Instructions

    Add orange juice with cumin, turmeric, cayenne pepper, star anise, cinnamon stick, salt and Alpro semi‑fat margarine to a pot and bring to a boil. Place couscous in a bowl. Pour the orange spice broth over it and stir briefly. Cover tightly and let the couscous sit for about 30 minutes.

    Peel, wash, seed and dice the bell pepper. Dice the tomato. Wash the parsley and pat dry. Pull the leaves from the stems and finely chop them.

    Soak the roll in Alpro soy drink Original. Peel and finely chop the onions and garlic. Heat 2 tbsp oil in a pan. Sauté the onions and garlic until translucent, add 2 tbsp curry powder. Set aside to cool. Place the lamb mince in a bowl. Add the onions, soaked roll, beaten eggs, 2 tbsp curry, raisins, pine nuts and salt. Mix well with a hand mixer.

    Preheat the oven to 190 °C (170 °C fan). Shape 12 patties from the mixture. Heat the remaining olive oil in a pan. Brown the patties all around and place them on a baking tray lined with parchment paper. Bake on the middle rack for about 8–10 minutes.

    Fluff the couscous very well with a fork. Season with lemon juice. Add the bell pepper, tomato and parsley and mix together.

    For the mint yogurt alternative wash and pat dry the mint. Pull the leaves from the stems and cut into strips. Place Alpro yogurt in a bowl. Add mint, salt, pepper and sugar and stir.

    Plate the orange couscous, lamb patties and mint yogurt alternative on plates.
