Ingredients

  • 2.5 kg pre-cooked lamb leg (1 pre-cooked lamb leg)
  • salt, freshly ground pepper
  • 3 tbsp olive oil
  • 2 rosemary sprigs
  • thyme
  • 5 garlic cloves
  • 250 ml broth
  • 2 red bell peppers
  • 1 bunch spring onions
  • 250 g Cherry Tomatoes
  • Basil

Instructions

    Rinse the lamb leg and pat it dry. Season with salt and pepper. Heat olive oil in a roasting pan. Brown the leg on all sides. Add herbs and trimmed garlic cloves. Pour in broth. Cover the pan and roast in a preheated oven at 200°C (170°C fan, gas level 3) for about two hours and thirty minutes.

    During roasting, baste the leg several times with the pan juices. Rinse the bell peppers, deseed and cut into strips. Trim the spring onions and slice them into wide ribbons.

    In the last forty-five minutes, open the pan and add the vegetables. Wash the tomatoes, halve them and add ten minutes before the end of cooking. Season with salt and pepper. Before serving, sprinkle fresh basil leaves on top.
