Lamb Fillets on Skewers with Bulgur Salad

Ingredients
- 250 g bulgur
- 4 lamb fillets
- 4 Spring Onions
- 1 untreated lemon
- 40 g whole almond kernels
- 30 ml olive oil
- 1 tsp sugar
- Salt
- Pepper (from the grinder)
- steak pepper
- 4 tbsp rapeseed oil

Cook the bulgur according to package instructions in boiling water. Drain and let cool. Remove tendons from lamb fillets and lightly flatten with a meat mallet. Trim, wash, and cut spring onions into diagonal thin rolls. Thinly peel lemon and slice zest into fine strips. Squeeze lemon juice. Roughly chop almonds.

Mix bulgur with lemon juice, zest, spring onions, almonds, and olive oil to make a bulgur salad. Season with sugar, salt, and pepper. Thread lamb fillets onto 8 skewers and season with steak pepper. Heat rapeseed oil in a large pan and sear lamb fillets for 2 minutes on each side. Salt after cooking. Arrange salad on plates and place skewers on top.
