Ingredients
- 1 kg lamb meat (from shoulder or shank)
- 2 onions
- 2 Garlic cloves
- 2 tbsp plant oil
- 2 tbsp green curry paste
- 200 ml lamb stock
- 400 ml coconut milk
- 2 tbsp coarsely chopped coriander leaves
- Salt
- Pepper
Instructions

Rinse the lamb, pat dry and cut into strips. Peel the onions and garlic; slice the onions into strips and finely chop the garlic.

Brown the meat in hot oil, then remove it from the pan. Sauté the onions and garlic until golden brown. Add the curry paste briefly, pour in the stock and coconut milk, and return the meat to the pan. Cover partially and simmer gently for about 1 hour, stirring occasionally and adding more stock if needed.

Finally add the coriander leaves, season with salt and pepper, and serve.
