Lamb chops with mash

Ingredients
- 800 g waxy potatoes
- Salt
- 250 g green beans
- 2 Handfuls Basil
- 1 Garlic clove
- 5 tbsp olive oil
- 2 Tbsp grated Parmesan
- 100 ml heavy cream
- 100 ml milk
- 8 lamb chops (pre‑cooked)
- Pepper

Wash the potatoes and boil in salted water for about 30 minutes.

Rinse, trim, and boil the beans in salted water for 6-8 minutes. Drain, shock, cut into ~2 cm pieces. Rinse basil, shake dry, pluck leaves, slice into strips. Blend half the basil with peeled garlic and 4‑5 tbsp oil finely. Stir in parmesan. Peel potatoes, press through a potato masher, let steam off. Heat milk with cream, pour over mashed potatoes, stir in pesto until smooth. Fold in remaining basil and beans, season with salt.

Rinse lamb chops, pat dry, season with salt and pepper. In a hot pan with remaining oil, brown both sides for 2‑3 minutes. Reduce heat, cook 3‑4 minutes to pink center. Plate with mash.
