Lamb Casserole

Ingredients

  • 500 g ground lamb
  • 1 onion
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 1 tbsp grated zest of an untreated lemon
  • 1 tbsp thyme
  • Salt
  • ground pepper
  • 350 g green beans
  • 700 g new potatoes
  • 4 tbsp butter
  • 2 tbsp flour
  • 0.5 l milk
  • 100 g sheep cheese

Instructions

    Peel and finely chop the onion and garlic, then sauté in hot olive oil until translucent. Add the ground lamb and cook until crumbly. Season with lemon zest, thyme, salt, and pepper.

    Trim the green beans, snap off ends, halve large ones. Boil in salted water for about 5 minutes, then shock in cold water and drain. Peel the potatoes and slice into thin rounds.

    Grease a baking dish with butter and layer potato slices in a brick pattern. Spread lamb over them, add another layer of potatoes, and arrange green beans across the top. Season each layer with salt and pepper. Finish with a final potato layer.

    Melt remaining butter in a saucepan, sprinkle flour over it and stir to toast. Add milk, whisk vigorously, bring to a boil once, then add diced sheep cheese, salt, and pepper.

    Pour the sauce over the casserole. Preheat oven to 180°C (356°F) with fan and bake for about 60 minutes. After 30 minutes, cover the surface with foil.
