Ingredients
- 400 g unpeeled almond kernels (ground)
- 400 g peeled almond kernels (ground)
- 600 g powdered sugar
- 5 tbsp flour
- 4 egg whites
- butter (for the molds)
- semolina (for the molds)
- glaze
- 2 egg whites
- 200 g powdered sugar

Grind the ground almonds with the powdered sugar again until fine. Beat the egg whites to stiff peaks and add enough of them to form a firm dough. Knead the dough well, shape it into suitable rolls, and fill the corresponding ring molds (butter the molds and dust with semolina). Brush with egg yolks.

Bake the rings on a baking sheet at 200°C fan-forced for about 12–15 minutes. Remove the cake rings from the mold as quickly as possible and cool them on a wire rack. Then remove any remaining semolina.
