Kiwi Lime Cocktail

Kiwi-Lime Cocktail: Herb-sour cocktail in green and red. One glass of the cocktail provides over 200 mg vitamin C, well double the daily requirement!

Ingredients

  • 450 g large kiwi (6 large kiwis)
  • 4 limes (2 organic)
  • 350 g pomegranate (1 pomegranate)
  • Also: ice cubes

Instructions

    Thinly peel the kiwis and roughly dice them.

  2. 2.

    Rinse the limes hot and dry rub. Cut the organic fruits in half and from each of the 4 halves slice one thin piece, set aside. Halve the remaining fruits as well, juice all limes.

    From the pomegranate at the calyx base cut out a wedge-shaped piece. Hold the fruit over a bowl and with some pressure break it apart so the seeds fall into the bowl. Wear thin rubber or disposable gloves to avoid staining from the juice.

    Add kiwi cubes and lime juice to a tall vessel and puree very finely with an immersion blender.

  5. 5.

    Crush ice cubes in an ice crusher until very fine and distribute over 2 glasses, also add the lime slices. Pour kiwi purée over them. Add half of the pomegranate seeds into each glass and serve immediately.
