Ingredients
- 200 g smoked fish
- 6 Eggs
- 2 onions
- 1 tsp green curry powder
- 2 cups cooked rice
- 2 tbsp oil
- 1 tbsp oyster sauce
- 100 g canned peas
- 1 tbsp chopped parsley
- Salt
- Pepper

Cut the fish into cubes. Boil the eggs for about 5-6 minutes (they should remain slightly soft inside). Peel and finely chop the onions, then sauté them in oil until tender. Add the curry powder and oyster sauce and cook for another three minutes. Stir in the rice, parsley, and fish, gently heating while stirring carefully. Season with pepper and salt.

Peel the eggs and quarter each one. Distribute the Kedgeree onto plates and garnish with six egg slices on top.
