Kale Soup

Kale soup with coconut, chili and pistachios from Spoonsparrow: quickly prepared, delicious and healthy.
Ingredients
- 300 g Kale
- 1 Garlic clove
- 10 g ginger
- 1 red chili pepper
- 1 Lime (juice)
- 400 ml coconut milk
- Salt
- Pepper
- 4 tsp Linseed oil
- 30 g Pistachios (2 tbsp)

Clean the kale, wash it, pick the leaves from the tough stems and chop them finely. Peel and chop the garlic and ginger. Halve, deseed, wash and chop the chili pepper lengthwise.

Place kale, garlic, ginger, half of the chili pepper, lime juice, 350 ml coconut milk and 100–150 ml water in a food processor and purée finely. Season the kale soup with salt and pepper.

Chop the pistachios. Fill the soup into 4 bowls, drizzle with the remaining coconut milk and linseed oil and sprinkle with the remaining chili pepper and pistachios.
