Kaiserschmarren

Ingredients
- 130 g flour
- 2 tbsp sugar
- 1 packet vanilla sugar
- 1 pinch salt
- 6 Eggs
- 250 ml milk
- 2 tbsp raisins
- 20 ml rum
- butter for baking
- 1 tbsp powdered sugar
- powdered sugar for dusting
- 1 kg apples
- 3 tbsp sugar
- cinnamon powder (1 tsp)
- clove powder (1 tsp)
- 1 tsp grated lemon zest
Instructions

Wash apples, quarter them, remove cores and cut into pieces. Simmer apple pieces with 3 tbsp water, sugar, lemon zest, and spices for a few minutes until the apples break down and soften; taste and set aside.

Separate eggs. Whisk flour, salt, powdered sugar, sugar, and yolks well and let rest for 30 minutes. Soak raisins in rum. Beat egg whites to stiff peaks.

Whisk the batter thoroughly again and fold in the beaten egg whites. In a large oven‑proof pan with hot butter, cook one thick pancake, flip it, and finish cooking.

Tear the batter into small pieces, add rum-soaked raisins, dust with powdered sugar, and caramelize in a preheated oven at 220°C.

Before serving, dust Kaiserschmarren with powdered sugar and serve with apple sauce.
