Italian-style Sushi

Ingredients
- 120 g sushi rice
- 2 EL rice vinegar
- 1 TL salt
- 1 TL sugar
- Basil
- 10 dried pickled tomatoes (cut into 1 cm strips)
- 1 ball mozzarella (cut into 1 cm thick strips)
- horseradish (for garnish)

Wash the sushi rice with cold water until the runoff is clear. Add about 125 ml cold water to a pot, bring to a boil and simmer gently for about 15 minutes. Transfer the cooked rice to a bowl. Warm the rice vinegar slightly, dissolve sugar and salt in it. Drizzle over the cooked rice and mix crosswise with chopsticks (just pull through the rice, do not stir). Let the rice cool.

Spread the cooled rice about 1 cm high on a rectangular piece of household plastic wrap. Layer basil leaves tightly overlapping. Flip the assembly onto a sushi mat so the basil side is down, then peel off the plastic wrap in pieces. Place a strip of dried tomatoes in the middle, add mozzarella strips over them and cover with more tomatoes. Use the mat to roll into a sushi roll. Slice into bite-sized pieces and serve with horseradish.
