Italian Pea Omelette

Ingredients
- 1 Shallot
- 1 Garlic clove
- 40 g arugula (0.5 bunch)
- 500 g frozen peas
- 7 eggs
- 150 ml whipping cream
- Salt
- Pepper
- 1 tbsp Olive Oil

Peel and finely chop the shallot and garlic. Wash, rinse, and dry the arugula. Thaw the peas.

Beat the eggs in a bowl with the cream, seasoning with salt and pepper. Heat the oil in an ovenproof skillet over medium heat and sauté the shallot and garlic until translucent. Add the peas and cook briefly. Pour in the egg mixture and let it set slightly. Transfer the pan to a preheated oven at 200 °C (180 °C fan; gas: level 3) and bake for 15–20 minutes until golden yellow. Remove, cut into pieces, and serve garnished with arugula.
