Ingredients
- 350 g tomatoes
- 10 eggs
- 1 bunch spring onions
- 70 g parmesan (grated)
- 2 tbsp oil
- Salt
- Pepper

Quarter the tomatoes, remove seeds and roughly dice them. Clean the spring onions and cut into thin rings. Heat oil in a pan and sauté the onions until translucent, then add half of the tomatoes.

Whisk the eggs, stir in the parmesan, and pour half of the mixture into the pan. Cook over low heat until set, carefully flip. Repeat with the remaining ingredients.
