Irish Stew

- 4 Carrots
- 2 onions
- 800 g lamb meat (breast or shank, ready to cook)
- 5 firm potatoes
- 2 Garlic cloves
- 2 tbsp thyme
- Salt
- Pepper (freshly ground)
- 1 l lamb stock
- 1 tbsp Olive Oil

Preheat the oven to 180°C (350°F).

Peel and slice the carrots. Peel and finely dice the onions. Wash, pat dry, trim, and cube the lamb.

Peel and wash the potatoes; cover two with water and dice the remaining ones. Peel and mince the garlic, mix with the lamb cubes and thyme leaves, then layer alternately with vegetables in four oven-safe ramekins, seasoning each layer lightly with salt and pepper. Pour almost all of the stock over the layers and bake for 1 hour. Slice the remaining potatoes thinly, arrange them loosely on top of the stew, drizzle lightly with oil, season with salt, and bake for an additional 45 minutes. Cover promptly with foil. Remove the finished Irish Stew from the oven and serve immediately.
