Irish Lamb and Potato Stew

Ingredients
- 700 g lamb chops
- Salt
- black pepper (freshly ground)
- 4 Carrots
- 500 g firm potatoes
- 1 bunch spring onions (≈70 g)
- 4 Garlic cloves
- 1 large onion
- 800 ml beef broth
- 1 tsp cumin
- dark beer

Wash the meat, pat it dry and season generously with salt and pepper. Peel the carrots and cut them into 1 cm cubes. Peel the potatoes and cut them into 2–3 cm cubes. Wash and trim the spring onions, then slice them into rings. Peel and finely chop the garlic and onion.

Heat oil in a pot until hot and sear the meat on all sides. Add the garlic and onions and sauté for 5–10 minutes. Deglaze with broth, season with salt, pepper and cumin, and simmer for 30–35 minutes.

Add the potatoes, carrots and spring onions and cook for another 15–20 minutes until tender. Serve the finished Irish stew in a preheated dish. A dark beer pairs well.
